Years of practice, a mastery of dough that shows in his hands before it shows in the results, and a passion for Roman pizza that has deepened with time. During the cooking class you will learn directly from him all the secrets of authentic Roman pizza, step by step, with nothing pre-made and no shortcuts.
The lesson starts from the very beginning: the dough. Flour, water and your hands. You will knead the dough yourself, feel it change under your fingers, learn to prepare the perfect sauce with fresh tomatoes, and build your pizza with the toppings you prefer. Your instructor guides you through every step — the right flour, the kneading technique, the stretching, and finally the wood-fired oven, where you will bake your own pizza yourself.
While you work, a board of aged Lazio cheeses, prosciutto crudo and local salame is ready on the table beside you, along with a cold Spritz and a good glass of wine. You eat, you drink, you knead. The cooking class finds its rhythm straight away.
When your pizza is ready, you sit down and eat it at the table — with wine poured and the satisfaction of someone who made it with their own hands. To close in the most Italian way: a shot of homemade limoncello and a proper espresso.
