After hotel pickup in Miraflores, San Isidro, or Barranco, you'll start at a local market stocked by area farmers — a great window into Peru, one of the world's most biodiverse countries. Explore a bewildering range of jungle, highland, and coastal foods: native potatoes, maca root, exotic fruits, and ingredients you've likely never seen. Vendors will offer fresh tastes along the way, and you'll pick up the ingredients you'll cook with later.
Next, head to a beachfront kitchen where you'll cook with the sound of the Pacific in the background. The fixed menu covers three Peruvian classics:
Causa Limeña — layered chilled yellow potato starter with a savoury filling
Ceviche de Pescado — fresh catch-of-the-day fish, red onion, chilli, sweet potato, and Andean corn (a dish declared World Heritage)

You'll follow the chef's instructions, prepare each dish yourself, and then sit down to eat your own Peruvian feast facing the ocean. After class, we drop you back at your hotel — and email you the recipes so you can recreate the meal back home.
