As we continue, we will taste one of Como’s most traditional dishes: polenta uncia or polenta with braised meat. A true queen of the table in the Como area and throughout the Alps, polenta is made by cooking a mix of corn and buckwheat flour and served either with tender braised meat or with melted butter and local cheeses, as in the classic polenta uncia. We’ll also try the famous sciatt—crispy, golden pancakes with a gooey, stringy cheese centre, a crunchy delight that perfectly complements the heartiness of the polenta.
