Patín (a traditional dish from Santiago Atitlán): Small, dried, and salted fish accompanied by a tomato sauce and wrapped in Maxán leaves, a local plant. 2. Caldo de gallina criolla: A hearty soup prepared with free-range chicken, accompanied by vegetables and rice. 3. Pulique: Pork meat in a rich tomato sauce with tortilla dough, served with boiled potatoes and rice. Whichever of these three dishes you choose, will be accompanied by a refreshing natural hibiscus drink. Additionally, you will see and learn how to make your own tortillas.
