Caldo de gallina criolla: A hearty soup prepared with free-range chicken, accompanied by vegetables and rice. 3. Pulique: Pork meat in a rich tomato sauce with tortilla dough, served with boiled potatoes and rice. Whichever of these three dishes you choose, will be accompanied by a refreshing natural hibiscus drink. Additionally, you will see and learn how to make your own tortillas. As you may have already noticed, the traditional garments are vibrant and hold deep cultural and ancestral significance for the indigenous communities. Each village uses a distinct colour palette that represents its identity, and they create unique designs and embroidered patterns specific to its community. It serves as a non-verbal language, allowing people to recognise the origin of individuals by their attire. You will learn about the colours and embroidered motifs found in the textiles of Santiago. These textiles are crafted using entirely natural materials. The fibres are 100% hand-processed cotton, dyed with natural products, and woven using the backstrap loom, an ancient technique passed down from generation to generation, from mother to daughter.
