That of the norcino, is an ancient craft, and Umbria, in particular, has managed to make it a real culinary art renowned since Roman times. We will have a guided visit to a prestigious farm near Assisi, and there we will learn the secrets of this culinary tradition: the anatomy of the pig, the basic techniques of cutting the pig, processing of meat up to the production of sausages, preservation, salting, and ageing of meat. At the end of the lab, we will have a well-deserved lunch with the results of our work accompanied by other Umbrian typical products! After lunch, we'll reach Perugia for an interesting guided tour. Perugia is worth visiting not only for the beauty of its hilltop setting, but also for its fine old buildings. Before it came under Roman rule, it was one of the 12 cities of the Etruscan federation, and considerable sections of the Etruscan walls have been preserved. Perugia is known to the art world as the centre of the Umbrian School of Painting in the 15th and 16th centuries and its leading members, Perugino and Pinturicchio, worked here. The young Raphael worked in Perugino's studio until 1504. You'll find their works in Perugia's churches and public buildings.
