Boucan by Hotel Chocolat was fantastic! Thank you to Connell, the big boss, who was there to give us personal attention the entire trip. Thank you also to Marguerite, the front desk manager and Hencia, a breath of fresh air. She was delightful! We did it all! The cacao bean class is in two parts and please try both. St Lucia is very small, but clearly a contributor to the world's chocolate supply. The cacao beans are sorted by hand, you are shown how to graft a branch to a cacao sapling, and making your own bar of chocolate has a way of making you enjoy every bite! Our Chocolate tutor was absolutely in the know as she walked us around the plantation. At the bar class, Hishrame was quick to help me out and made sure I came away with a smooth chocolate bar. Thanks, Hishrame!! We ate all our meals at the hotel and were never disappointed. The chef knows what he is doing. The flavors were so complementary, delicate and savory, everything made to order. You will not be disappointed. Ever. We happened to be at Hotel Chocolat on my wife's birthday and the staff was extremely courteous. She was offered a birthday celebration drink, and Gina, our housekeeper, made up the bed with a rose petal heart and rose petal Happy Birthday message! She was so considerate and left a bottle of wine chilling in our room. The room is also stocked with beautiful tiny chocolate cookies and a soft chocolate candy. IT WAS JUST THE BEST.
