Overall a lovely hotel, we visited in April so the hotel was quiet and had a lovely relaxed vibe with plenty of space and seats outside. Beautiful gardens, very comfortable room, excellent housekeeping, friendly staff, perfect location in Saint Remy. Didn't eat at the restaurant so can't comment on that. (But would highly recommend Gus restaurant, just across the street.) The pool wasn't opened yet but looked lovely.
Minor downsides - breakfast is really overpriced, for a price that high I would expect much more choice at the buffet. However breakfast service was very pleasant. (And hotel breakfasts in this part of France seem to be ridiculously priced in general!) Room, while comfortable, didn't feel very luxurious for a deluxe room in such a nice hotel.
