A paniolo, or Hawaiian cowboy, rides the range on the huge Parker Ranch near Waimea. This grassy plateau became cowboy country in the early 1800s when cattle were introduced. Other 19th-century imports that thrive on the Big Island are macadamia nuts and coffee. Rev up your range riding with a cup of fragrant Kona java and a nut muffin.
