I spent three nights in Manger Square hotel. The room was superb - double bed, air conditioning, TV with BBC, CNN and other English-speaking channels, fridge, safe - and the breakfast buffet had something for all tastes. Most guests are out sight-seeing, but sometimes I was in during the day, and saw how professional the hotel staff are. The hotel appears to cater mainly to large groups, but as a solo traveller, I felt well cared-for and perfectly comfortable.
We stayed at the Intercontinental Hotel (Jacir Palace) over the Yom Kippur weekend. It was a busy time for them, but our stay was wonderful- absolutely beautiful historic main building, very friendly staff who spoke English, Hebrew and Arabic (and probably more), a great pool, numerous restaurants, bars and other public spaces, and close enough to walk to sites of interest or easy and cheap taxis. We felt spoiled after a great two days. Bethlehem itself was easy to get around in, with lots to see and do. The one suggestion: yikes, early September in Israel and the West Bank is too hot for this mid-westerner! We'll go during another season next time (although there WAS that great pool...).
